Oh my. This was good. This weekend I felt like making a raw cake again. And with fresh strawberries starting to pop out everywhere with spring - it called for a delicious strawberry cheesecake- a healthy raw cheesecake! I will be making this healthy raw strawberry cheesecake recipe again for friends on the weekend and for some work colleagues. Lucky them! ...and me!
Raw Strawberry Cheesecake Recipe:
Ingredients:
Base:
- 1 cup of pecans ( or almonds/brazil nuts)
- 1 cup of pitted dates
- 1/2 cup almonds (or other nuts)
- 1 tbsp coconut oil
"Cheesecake":
- 2 cup of soaked cashews ( overnight or a few hours)
- 1 tbsp of coconut oil;
- 1/3 cup of rice malt syrup;
- 1 cup of strawberries
- more strawberries to add as toppings (optional)
Instructions:
- Soak your cashews for a few hours;
- Line up a tart pan with some glad wrap;
- Mix in a food processor the almond, pecans until fine;
- Add in the dates;
- Add in the coconut oil and once all mixed in well lay your base in your tart pan with a spoon or hands to create an even layer. Make sure to put some on the edge.
- Leave the base to set in the freezer while making the next steps.
- For the cheesecake part, mix the soaked cashews in a food processor, add in the rice malt syrup, coconut oil and once mixed well add in your rinsed strawberries. The more the merrier to give it a more pink/red colour.
- Lay the second layer on your base evenly with a spoon.
- Add cut up strawberries to top your raw cheesecake. Be creative!
- Leave to set in the freezer for 1 hour. You can keep it in the fridge for a few days afterwards.
- Enjoy.
